Strawberry tiramisu recipe – the healthiest Italian tiramisu
Tiramisu is an amazing Italian dessert, probably the most known over the world. Strawberry tiramisu recipe is a particular version that I developed over time. It is fragrant and delicious as the traditional recipe but it is lighter and perfect for kids, because they can get the pleasure of the dessert but eating a lot of fruits.
The recipe is very easy and you will be able to surprise your guests with a very special dish. Also, it is a must in my house for Easter.
The must to pair with this dish is a Italian spumante, a sparkling white wine coming from the north of Italy as Cuvée Annamaria Clementi!
INGREDIENTS
- 2 cups fresh strawberries
- 3 eggs
- 5 tablespoons sugar
- 1 pinch of salt
- 12 savoiardi or lady fingers biscuits
- 1 cup (250 grams) mascarpone cheese
- a few tablespoons of powdered sugar
DIRECTIONS
- Wash and cut into thin slices half of the strawberries
- Put the sliced strawberries in a bowl with 2 tablespoons of sugar. Stir and let them soak
- Arrange the biscuits on the bottom of a glass baking pan, covering the whole surface
- Separate the egg whites from the yolks and put them in 2 different bowls. The one for the whites has to be large
- Add a pinch of salt to the whites of the eggs and whip very hard, with the help of an electric whipper
- Add the remaining 3 tablespoons of sugar to the yolks and whip them until they become pale yellow
- Stir gently the whites beaten and the egg yolks
- Gently mix the whipped yolks with the mascarpone cheese until you get a smooth cream
- Put the sauce that you can find at the bottom of the bowl full of sliced strawberry on top of the biscuits; try and soak them
- Cover the savoiardi with the sliced strawberries and level them to make them even
- Add the mascarpone cream
- Let the tiramisù rest in the fridge for a few hours, better overnight
- Just before serving, garnish the cake with the remaining strawberries, after you cut them in an half, and sprinkle with powdered sugar
