Potato Gateau is a Neapolitan traditional recipe.
8 or 9 medium potatoes, 2 eggs, 6/ 8 slices of ham, mozzarella 160 grams, 160 grams of smoked scamorza cheese, 1 tablespoon of extra virgin olive oil, nutmeg, bread crumbs (1 cup), 1 cup Parmesan grated.
Meanwhile shred the ham and dice the mozzarella too (well drained and squeezed) and the smoked scamorza cheese.
Preheat the oven to 180 °.
Then laid the mixture into a large bowl and add the most part of the Parmesan , eggs , salt if needed, and nutmeg and mix very well the ingredients well with a wooden spoon.
Finally add the bread crumbs and mix again.
In a baking pan put the baking paper and then the mixture and level it with a spatula
Sprinkle the surface of the pie with the remaining grated Parmesan and a little bread crumbs and a little olive oil, then bake at 180 degrees for the first 15 minutes ; then bring the oven to 200 degrees for the next 15 minutes .
Once cooked , take the pie out of the oven and let cool for at least 10-15 minutes, then cut into pieces and serve warm.
