Pasta with Sicilian pesto with basil, tomatoes and almonds: WOW pasta!

The Sicilian pesto pasta is an Italian recipe easy and tasty, typical of Sicily.


To do this you need pesto for 4 people
50 grams of fresh basil leaves , 50 gammi blanched almonds, 50 grams of sun-dried tomatoes, 5 or 6 cherry tomatoes , 1 pinch of sugar, 1 clove of peeled garlic , 1 cup olive oil do EVO , 50 grams of grated parmesan , 1 ladle of pasta cooking water. If you cannot find the sun-dried tomatos, you may use 120 grams of cherry tomatoes.


The procedure is very simple: just put the washed basil , garlic , almonds, sugar, sun-dried tomatoes and fresh tomatoes in a blender and blend well together slowly adding the oil. If necessary, add a bit ‘ of water and a little’ oil and continue to whisk until the whole thing will become a thick and creamy sauce .

Meanwhile, cook the pasta al dente .


While the water is boiling , transferred  the pesto in a large bowl , add the grated Parmesan cheese and stir.

Once incorporated the Parmesan, add the cooking water which will make your pesto salt , warm, creamy and tasty .


You just have to drain the pasta al dente , season with the Sicilian pesto and enjoy it.
