Pasta Frittata with Spinach – An Italian omelet
When some pasta is left I love to transform it into a delicious Italian omelet called frittata, with the addition of a bit ‘ of vegetables: tasty hot and delicious cold .
The frittata is the Italian dish similar to the omelet but cooked on both sides.
Here it is used : 1 serving of pasta salad , 4 eggs, a serving of cooked vegetables coarsely chopped (I used spinach) 3 tablespoons extra virgin olive oil , 5 or 6 tablespoons of grated Parmesan cheese . salt, pepper and some grated ginger.
First , beat the eggs with the grated Parmesan cheese , a pinch of salt, the spinach, a little ‘pepper and a bit ‘ of ground ginger if you like .
The eggs must become quite foamy . At this point, add the pasta and stir well until cold will be well incorporated into the eggs .
In a large nonstick skillet put the 4 tablespoons of oil and heat over medium heat.
Once it is hot, add the eggs with the pasta and cook over low heat until the bottom is golden and compact enough to be able to turn . It will take about 10-12 minutes. Now with the help of a plate , turn the frittata and brown the other side.
Your frittata – omelet pasta and vegetables is ready, tasty and fantastic. You may also serve it as appetizer or entrance, cut in little pieces.
