TRIUMPH OF ZUCCHINI AND PEPPERS : A GORGEOUS SIDE DISH & SAUCE
This fragrant preparation iis not onlyreally delicious , easy and very healthy: it may used in many different ways , and can also be stored to have it always ready when you whish it. And you may also use it as dressing for pasta or rice.
I prepare in quantity in the summer when the vegetables come from the garden and I keep it in the vacuum vessel so that we may enjoy throughout the year.
What you need is :
3 cups cherry tomatoes small type , oregano, plenty of basil, 2 cloves of garlic, 1 shallot , 4 large zucchini , 2 peppers, 1 large carrot , 4 tablespoons of extra virgin olive oil , 1 /2 tsp sugar, salt to taste.
Start by cutting into small pieces the carrot , tomatoes , shallot and 2 cloves of garlic stripped. Cur the zucchini in round pieces.
In a nonstick pan put 4 tablespoons of extra virgin olive oil and add the vegetables in cold , add salt to taste.
Put to simmer with the lid holding the flame slowly lower the vegetables will release their liquid permettarà to cook them without burning.
At this point clean the peppers freeing the seeds, stalks and white internal parts, and cut slopes.
After about 15 minutes since the start of the cooking, add the peppers and cook another 15 minute , and in any case until all vegetables are cooked but not mashed , and the sauce is a bit ‘ dry.
At this poin turn off the beat, add the basil and stir.
Here is your triumph zucchini and peppers is ready : you can serve it as an accompaniment to roast meat, boiled meat , cheese , fish.
