Green Parsley Sauce
This is an old sauce recipe that is prepared in northern Italy to accompany meats and boiled vegetable.
It ‘ really fragrant and delicious, although very easy , and you can freeze to have it ready just when you need it.
Here’s what you need: 2 eggs, 1 cup fresh parsley, 3 tablespoons capers in brine, 80 grams of bread crumbs , 3 tablespoons vinegar, 4 tablespoons oil , 2 cloves of garlic and 2 anchovy fillets in oil .
First of all cook the eggs until they are hard boiled .
At the same time soak the bread with vinegar , adding a little ‘ if necessary.
Put in a blender boiled eggs , not in shell , the leaves of the parsley , capers, anchovy fillets and garlic peeled . Blend until you have a very fine sauce , adding the oil a little at time .
And then the green sauce is ready, easy and super fragrant.
Set aside the green sauce for 24 hours, then serve with boiled or roast meat or boiled vegetables : really great ! Buon appetito and enjoy it!
