Zucchini soup: quick, tasty and really healthy
Here another easy and yummy recipe from Apulia. Will be ready in very little time, the only secret is to use only very fresh vegetables and very good olive oil.
All you need are 300 grams of fresh and little zucchini, 1 or 2 cloves of garlic depending on your taste, 3 tablespoons of EVO oil (Extra Virgin Olive oil) for coocking and one more EVO oil tablespoon per person. To this you will add some fresh chopped fresh mint or parsley, again according to your personal tast – I love the great perfume of the fresh mint and the special flavour that gives to this soup.
To begin, wash the zucchini well , cut the extremities and cut the zucchini into slices of about 2 mm. Then prepare the garlic, peeled, crushed or sliced.
Put the sliced zucchini, garlic and salt and 3 tablespoon of EVO oil in a saucepan and cover with water up to the middle. Cover with the lid and bring to a boil.
As soon as the water boils, remove the lid and cook until the zucchini are soft but not untrimmed (must maintain good consistency).
Let cool and serve with chopped fresh parsley or mint, adding a tablespoon of extra virgin olive oil. Enjoy it!
