Strawberry and Blueberry Pastry: so sweet, so simple
A delicious sweet recipe with fruits
This is a delicius and simple little Pastry, all with natural and fresh ingredients!
Ingredients: a Daysi Cake and a Fruit Compote.
Here what you need.
For the stuffing: a fruit compote, according to your personal taste – I love a mix of strawberry and blueberry!
100 grams of fruit, 50 grams of sugar (a couple os table spoons), Fresh Thyme, some grated ginger, 1 tablespoon of lemon juice
and for the Daisy cake you will need:
100g of flour 00, 100g of potato starch, 80g of melted butter, 200g of icing sugar, 6 fresh eggs, the grated rind of one lemon bio (or less if you wish – in alternative you may add vanilla extract), a pinch of salt, butter and flour for the mold of 24 cm diameter
Let’s start with the Daisy Cake.
First of all, divide the egg yolks from the whites . And switch on the oven static at 180 degrees.
With an electric mixer fitted well the egg whites and set aside .
With the same beaters whip the egg yolks with the icing sugar until will be soft and fluffy.
Put together the mixture of egg yolks and sugar with half of the egg whites. Do it with a wood spoon and a gentle top down motion, till you will get a smooth cream.
Sift both the flours and add them gently to the cream .
Now is time to add the lemon grated limb or the vanilla extract. Then pour half of egg whites and finally the melted butter very gently warmed .
If needed, butter the pan and switch a light layer of flour (if you use a silicon pan this is not needed) , pour the cake cream and place in a hot oven to bake static at 180 degrees for about 40/45 minutes.
Turn off the oven , open the door and let the cake cool inside. After 30 minutes you Daisy Cake will be colder, and you may put it a plate and cover with a little sifted icing sugar.
While the Daisy Cake is cooking, we can prepare the fruit compote:
Put all the ingredients (fruits, sugar, thyme, grated ginger and lemon juice) in a non-stick pot and let it cook at low heat, stirring occasionally for about 30/40 minutes – At the end you will get a compote ready to stuff your daisy cake!
Once the cake and the compore are ready, allow both of them to cool.
Now you may cut the daisy cake it in smaller piece – I usually cut in quarters: this will make the next operation much easier.
The following step consists in cut the cake horizontally , and stuff it with your compost.
Recompose the cake and cut in smaller pieces – now is ready – please consider that if you will let these pastries repose for few hours, they will be even better since the compote to drench the cake. Enjoy it!
