Tiramisù with Strawberries

This version of tiramisu is fragrant and delicious, really nice and perfect for the kids.
My eldest son just came back a few days from NY where he is attending an MBA, so I prepared this wonderful dessert enriched with fruit.

Here’s what you need

2 cups fresh strawberries, 3 eggs, 5 tablespoons sugar, 1 pinch of salt, a dozen of savoiardi or lady fingers, a cup (250 grams) mascarpone cheese, a few tablespoons of powdered sugar.

First of all, wash and cut into thin slices half of the strawberries.
Put them to soak in a bowl with 2 tablespoons of sugar. Stir and let it rest.

Arrange the savoirdi on the bottom of a flat container, so as to cover it entirely.

Now divide the egg whites from the yolks and put them in 2 different bowls. The one for the whites must be a large one.

Whip the whites of the eggs , to which you add a pinch of salt,very hard .

Now add the  the remaining 3 tablespoons of sugar to egg yolks to whip these too, until they become frothy and pale yellow.

Stir gently the whites beaten and the egg yolks.
Then incorporated, always gently, mascarpone,  until you get a smooth, even and frothy cream.

At this point with the sauce obtained from the  strawberries macerated with sugar soak the savoiardi put on the bottom of the container, trying to make it evenly.

Then cover the savoiardi with all the cut strawberries and level them.

It ‘s time to add the mascarpone cream.

Let the tiramisù rest in the fridge few hours, better overnight.

Just before serving, garnish the cake with the remaining strawberries may be cut in half and sprinkle with powdered sugar.
