King Prawns on Mashed Fava Beans, the famous Fava Beans Sicilian Macco
This dish is based on an ancient Sicilian recipe , the fava beans macco, which is a kind of mash, which I love very much. And I think that goes wery well with the king prawns.
So , here’s what is needed :
half a kilogram of already boiled fava beans ( canned ones are fine too ), a shallot, a dozen king prawns , 1 glass of white wine, 8 tablespoons of extra virgin olive oil , a bit ‘ of chives, salt to taste.
First of all chop the shallots.
In a nonstick pan medium size put 3 tablespoons of olive oil and the chopped shallot, and let it cook on low heat.
After a few minutes add the beans with a little ‘ of their water, salt to taste and let them go always on a slow fire for about twenty minutes to flavor them with the shallot.
Chop the chives , by saving some wires that you will need to decorate the plate.
In a pan put 3 tablespoons of olive oil and brown the shrimp.
Then add the white wine and let it evaporate .
Turn off the heat and put on the lid , taking care that there is a bit ‘ cooking sauce.
Turn off the heat also of the fava beans : again you must have to have a little ‘ cooking water . Blend well the fava beans with an immersion blender to get your macco.
Now create your dish : macco goes first , then a couple of tablespoons of extra virgin olive oil
then shrimp and the sauce for shrimp.
