Chickpeas Cream with Mussels
This is a tasty and truly healthy main course that will make your day special!
Here what you need:
1 kg of fresh mussels, rosemary, sage, freshly ground white pepper (only if you like it) , 6 spoons of extra virgin olive oil, approximately 400 grams of chickpeas, white wine, 1 clove of garlic.
Boil the chickpeas in plenty of water and let thicken, add the rosemary and 3 or 4 sage leaves. Now with the mixer mix well to obtain a tasty creamy soup.
Meanwhile cook the mussels in a pot.
Once are open, keep the molluscs and put them into a pan with the oil and the chopped garlic.
After a couple of minutes add the wine and let it evaporate.
Put the cream of chickpeas in a serving plate, add if you like it a good grinding of pepper, add a little olive oil.
Finally add the mussels with their sauce, and serve it.
