Tomato and Bread Cream: a simple vegetarian tasty dish from Tuscany, easy yummy tasty
To night I came back home late from work, so I went for a super easy healthy vegetarian dish, that you can prepare with few simple elements.
This typical Tuscan dish is called Pappa col pomodoro and it’s yummy and tasty, you could define a cream or a soup with a bruschetta taste!
All you need is:
500 g of super ripe red tomatoes, 300 grams of stale bread, 2 cloves of garlic, 6 spoons of extra virgin olive, salt to taste, abundant basil, half a tablespoon of oregano and finally…. less than one hour of your time.
First of all, have the bread cut in pieces and tomatoes, very finely chopped.
Chop also the garlic.
In a saucepan put 2 tablespoons of oil, then add the bread, the tomatoes and the garlic and salt to taste.
Cover with water and add also half a tablespoon of oregano.
Put the lid on the pot, and simmer for at least half an hour or so adding a little more water if needed while cooking. In the meantime chop the basil.
The Tomato and Bread Soup will be ready when the bread will be undone, and it will be a sort of cream with small pieces of bread.
Add now the basil, mix and let it rest for about 10 minutes.
Serve,seasoning with plenty of extra virgin oil. Buon appetito, enjoy it!
