Apple, Juniper & Ginger: a wonderful spicy Sauce for cheese and meat
I can not always have time to cook. For these times , I’m used to prepare different spicy and tasty sauces that turns a bit ‘ of cheese or grilled meat into something special.
It is fruit sauces, completely natural , that turn in something special with the addition of a spicy touch.
The sauce recipe here following is made with apples and juniper with a touch of ginger. This recipe is dedicated to my friend Silvana and her husband .
Here’s what you need:
3 beautiful apples , 1 cup white sugar , 10 juniper berries, some grated ginger , the juice of half a lemon and a pinch of salt.
Peel the apples and cut them into pieces.
Put the apples and the juniper berries with a pinch of salt in a pot and let simmer with lid , stirring occasionally , until apples are tender . If you hold down the fire will not need to add any liquid.
At this point past the apples and juniper berries with a potato masher and add the sugar .
Also add some grated ginger, more or less abundant according to your taste .
Again cook on a low flame still a bit ‘ , to obtain a sauce of the consistency of a puree, soft and dense at the same time .
Put sauce in small pots with vacuum caps and turn them so that the air comes out .
Serve with grilled or roasted meat or cheese, and you have a gourmet dish! Enjoy it!
