Scented Chicken with Bacon and Juniper
This dish is really really easy , very tasty and not expensive. The special taste of Juniper will make this dish truly special.
This can accompany with potatoes or polenta , and in the end you will have a delicious sauce with which you can dress the pasta or rice .
here’s what you need
6 Â chicken thighs, 3 tablespoons of bacon diced , 2 or 3 juniper berries, garlic , 2 tablespoons of extra virgin olive oil 12 sage leaves, 1 cup dry white wine 4 tbsp black olives without stone. No salt , just bacon !
First of all, dice the bacon and crush juniper berries and a clove of garlic, peeled.
In a nonstick pan put 1 tablespoon of extra virgin olive oil 2 chicken and whole sage leaves.
Brown the chicken on one side , then reduce the heat and add the garlic and juniper .
Stir a couple of times and add the bacon . Stir again and when the bacon will be toasted add the dry white wine, a little at a time.
Now just put the lid and cook the chicken on slow heat for 20 to 30 minutes, until the sauce has reduced and the chicken will become soft.
Turn off the heat , add the black olives (which should not cook otherwise they become bitter ) and serve.
