Mussels in green sauce
This recipe is from Apulia and is a fantatic starter, which accompanies us from years in our family meals during the Christmas holidays.
It really simple, and at the same time tasty and special.
For four people you need : 10 KG (350 ounces ) of fresh mussels , 100 grams (3,5 ounces, half a cup) of parsley, 6 tablespoons capers in brine, 1 lemon, 1 cup of extra virgin olive oil .
Clean up the parsley and place in a blender along with the capers.
Add the lemon juice by filtering the seeds , and oil.
Whisk well until the sauce is perfectly omogeneus and fragrant .
Put the sauce in the fridge.
Put the cleaned mussels in a pot over high heat and cook with lid on until they are opened. Let them cook for at least 20 minutes.
Now let them cool and then place on a large platter or on a tray, each one inside a valve, which will serve to hold the green sauce .
Now pour a teaspoon of sauce on each green mussel , so as to cover them well. Repeat this for all the mussels.
Here , your mussels with green sauce are ready, a real delicious dish!
