Codfish in Green Sauce with Black Olives
This is a fast and tasty recipe that really can be prepared in 20 minutes.
You will need:
3 or 4 boneless fillets of codfish (frozen is also OK ), 2 cups fresh parsley , 4 tablespoons capers in brine with their brine , 3 tablespoons vinegar, 1 anchovy fillet , 1 or 2 sun-dried tomatoes , 1 tablespoon plenty of black olives , 1 cup of extra virgin olive oil.
First of all, put the bread in a bowl with the capers brine and 3 tablespoons of vinegar. Soak bread well with a fork .
Put in a blender the bread with its sauce , parsley, capers, anchovy fillet, dried tomatoes and mix well, then add the oil a little ‘time keeping aside a spoon.
Blend well until you have a fragrant and thin sauce.
At this point in a frying pan put the oil tablespoon and then quickly cook the cod fillets . Just a few minutes on each side will be enough.
Now serve the codfish partially covering it with green sauce and add olives .
