ZUCCHINI AND POTATO VEGETARIAN SAVORY PIE
This simple vegetarian savory pie is fast , easy and super tasty and healthy.
Here what is needed:
4 medium zucchini, the equivalent in potatoes, 2 cups of Parmesan, 2 cups of bread crumbs, 2 eggs, basil, rosemary, 2 tablespoons extra virgin olive oil , salt to taste.
The process is really easy : put the bread, the zucchini cut into pieces, the potatoes cut into pieces (if you use the little ones you do not need to peel them) basil and rosemary in a blender and blend until you get a homogeneous mixture.
In the meantime turn the oven to 180 degrees C ( 370 F).
Pour the mixture into a large pot, add salt to taste and the Parmesan cheese and mix well.
Then add the eggs and mix again.
Grease a baking dish with 2 tablespoons oil .
Pour the mixture into the cake pan, and grate over a little ‘ dry bread .
Bake at 180 degrees C ( 370 F) for about an hour , and in any case until, by inserting a toothpick into the pie , comes out dry .
