Tomato sauce San Giovannino style

This is a traditional recipe from Puglia , fast easy and fragrant , to make a rustic tomato sauce absolutely perfect for pasta, but also suitable to accompany and make fantastic cold meats, cheese, and boiled vegetables .

This recipe is dedicated to my son Filippo, who learned it from my father in law and cooks with passion and great ability.

Here’s what you need: 3 cups cherry tomatoes , 3 cloves of garlic, salt to taste and 6 tablespoons extra virgin olive oil . This is the original recipe.: the few and normal ingredients that can be transformed in a wonderful dish!

At the end you can add basil or oregano if you like.

First of all, chopped tomatoes and salt them to taste.

Then finely chop the garlic.

In a pan put the oil ( abundant ), add the garlic and cook briefly until it is hot.

As soon as the garlic begins to smell , add the tomatoes without the liquid of vegetation that you will keep aside.
Cook over low heat, stirring occasionally and adding, if necessary, fluid vegetation of the tomato.

St. John The sauce will be ready within 20 to 30 minutes (depending on the tomatoes ) , just enough time to prepare a pasta al dente! Enjoy it!
