MUSSELS SOUP WITH TOMATO: ZUPPA DI COZZE
MUSSELS WITH TOMATO SOUP: a super classic, super tasty and super easy classic of the Italian cuisine.
This is a wonderful main dish!
ingredients
1 kg mussels well cleaned, 1 cup tomato sauce, 2 cups cherry tomatoes, 1 bunch of parsley, 2 cloves garlic, 3 tablespoons olive oil, 8 slices of bread
put in a pan wok type the mussels, put the lid on and cook on low heat until the mussels open. Remove the pan from the heat
In the meantime cut the tomatoes and chop the parsley and garlic.
Remove the mussels and their liquid filter in order to remove any residue.
Put the pan on the stove with the liquid from the mussels, olive oil and the cut tomatoes.
Sauté the tomatoes and add the tomato passata and then the garlic and chopped parsley.
Cook for 15 minutes and add the mussels, replace the lid and cook on a slow fire always for another 15 minutes.
In the meantime toast the bread slices.
Season with salt if necessary and serve with toasted bread. Enjoy it!
